Being an ambassador for Cost Plus World Market, I get to do so many cool things! The latest, an Easter recipe post and an opportunity to share with you an awesome new sweepstakes! 

For my recipe, I chose to do our family's favorite. Carrot Cake! Every year at Easter my kitchen is filled with delicious food such as Ham, Deviled eggs, homemade breads etc. But the one thing they all wait for is the dessert table. 

This year I've been playing around with the recipe a little and decided to do cupcakes instead of a cake. We decorated each cupcake with sprinkles and added picks to some and Easter candies to others. My recipe is a little in-depth but it is worth every single minute once you taste the deliciousness! 


Ingredients:

2 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
4 eggs
1 1/2 cups vegetable oil
3 cups grated carrots

1 large can of crushed pineapples
1 1/2 cups chopped walnuts, optional

Frosting: 

2 (8-ounce) packages cream cheese, room temperature
1/2 cup butter, room temperature
16-ounces powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Preheat oven to 350 degrees. Grease and flour pan of your choice. Line bottom of the pans with parchment paper or cupcake liners.

In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Add eggs and vegetable oil. Using a hand mixer, blend until combined. Add carrots, pineapple and pecans, if using.

Pour into pans. Bake for approximately 40 minutes. Remove from oven and cool for 5 minutes. Remove from pans and allow to cool completely before frosting.

For the frosting:

Add all ingredients, except nuts, into a medium bowl and beat until fluffy using a hand mixer. Stir in the nuts if using. Spread frosting over cooled cake/cupcakes and enjoy!


I also picked up some new dinner plates to decorate my Easter table with this year. They sit nicely on my table and I don't have to worry about someone knocking them off thanks to the handy carrier that they sit in. They will also be great to use an everyday dinner plate so I came out really good on that deal! Cost Plus World Market has so many great items to choose from! Many people don't know a whole lot about my personal life. I normally keep things quiet and just post my reviews and go on about my day.
