Innate Vitality: Vitamin B12 (ad)

 If you're like me at all, you're always tired and have little to no energy. I spoke with my Dr about this, and we did blood work, only to find out that I had a VERY LOW B12 level. Crockpot Crack Chicken

  One of The Baby Child's favorite recipes is my Crockpot Crack Chicken. It's SUPER easy and only 3 ingredients.  For this recipe I used  4 Bonesless / Skinless Chicken Breasts 1 Block of Cream Cheese  1 Packet of Ranch Dressing Mix (If you prefer a richer taste, you can add more cream cheese and/or ranch.) I laid the chicken in the crock pot and cut the cream cheese into cubes. After the chicken has cooked for about an hour to get the juices in the pot, I throw in the softened cream cheese and the ranch packet. Stir well and cook on low for a total of 6 hours. High for 4 hours, or until chicken is thoroughly cooked.  Once the chicken is fully cooked, I shred it apart with forks and serve on buns. You can also make this a meal by pairing it with your favorite veggies. It's delicious on mashed potatoes! The little one preferred hers as a sandwich, paired with her favorite Goldfish Crackers.

Blackeyed Pea and Sausage Chili

I LOVE making chili in the fall but when I do I have to make 2 different pots because of my husband's pickiness. Don't get me wrong, if I cook something that he doesn't like he'll gladly make a sandwich, but I can usually accommodate him in the same meal, just different ingredients. The only beans he eats are green beans and black-eyed peas so I make him a Black eyed Pea chili. While it's a little more work opening different cans, he still gets to eat chili with us on chili night. For this recipe I use the same ingredients as our chili, except I add black eyed peas instead of chili beans.  1 lb Hamburger Meat 1 lb Sausage 2 Cans of Black Eyed Peas 1 can of Diced Tomatoes 1 small can of Mushrooms Handful of Peppers and Onions 1 packet of Chili Seasoning  Mix all ingredients together while browning the meat. Once meat is thoroughly cooked, add it to your pot and mix well. Cover and simmer for about an hour to soften the peppers and onions and blend the ingredients tog...

Quick and Easy Taco Soup

As many of you know, my husband is a PICKY eater. You'd think being 62 years old he'd wanna try something different but nope. We had leftover spaghetti from the night before for him, so I decided to make us non picky eaters a pot of Taco Soup with ingredients I had on hand. Supper quick and easy! Ingredients: 1lb of Hamburger Meat 1 can of Rotel 1 can of Corn drained 2 cans of Pinto Beans Drained 1 Can of Black Beans rinsed and drained 2 cans of Diced Tomatoes Handful of Peppers and Onions 1 Ranch Seasoning Packet (your choice of flavor) I used Spicy Buffalo I threw all of my veggies in the pan with the seasoning pack and stirred well while I browned my meat. Once the meat was fully cooked, I added it to my my pan of veggies and let simmer for about 30 minutes to let all the flavors combine.  I served mine with tortilla chips and sour cream. Very warm and filling for these cool Tennessee nights and definitely a hit with the little one since she loves anything to do with chips!
