As many of you know, my husband is a PICKY eater. You'd think being 62 years old he'd wanna try something different but nope. We had leftover spaghetti from the night before for him, so I decided to make us non picky eaters a pot of Taco Soup with ingredients I had on hand. Supper quick and easy!
Ingredients:
1lb of Hamburger Meat
1 can of Rotel
1 can of Corn drained
2 cans of Pinto Beans Drained
1 Can of Black Beans rinsed and drained
2 cans of Diced Tomatoes
Handful of Peppers and Onions
1 Ranch Seasoning Packet (your choice of flavor) I used Spicy Buffalo
I threw all of my veggies in the pan with the seasoning pack and stirred well while I browned my meat. Once the meat was fully cooked, I added it to my my pan of veggies and let simmer for about 30 minutes to let all the flavors combine.
I served mine with tortilla chips and sour cream. Very warm and filling for these cool Tennessee nights and definitely a hit with the little one since she loves anything to do with chips!
